Beetroot Veg Dry or Chukandar ke Sabzi


     Ingredients:

    4 Beetroot
    1 teaspoon chana dal and ½ teaspoon urad dal(Optional)
    3-4 curry leaves
    1 teaspoon cumin seeds
    Salt to taste
    Pinch of turmeric powder
    Pinch or coriander powder
    Pinch of garam masala
    Pinch of Chili powder
    2-3 tsp Oil

    Preparation Method:

  •  Peel the beetroots and grate/shred it.
  •  Heat Oil in a frying pan.
  •   Roast chana dal and urad dal( Only if you like to add it to the beetroot dish)
  •   Now add curry leaves and cumin seeds, wait till they splutter.
  •    Add turmeric powder, coriander powder, salt and chili powder, give it a nice stir.
  •     Now add shredded beetroots and close the lid.
  •     Cook until soft and dark in color.
  •     If beetroots are not fresh and tender you may sprinkle some salt to the cooked beetroot sabzi. 
  •      Serve it with chapatti or Roti

Gobi Manchurian or cauliflower Manchurian


Ingredients:
  2 cups cauliflower florets
   Half cup Maida ( All purpose flour)
   1/4 cup corn flour
   Salt
   Garlic paste
    Half teaspoon Pepper powder
    Half teaspoon Red chili powder
     1 onion finely chopped
     1 finely chopped bell pepper
     Tomatoes ketchup
     Soy sauce(optional for color)
     Vinegar
     Water
          Preparation Method: 
  •   We can start with batter. Mix corn flour and all purpose flour together and make it a smooth batter. Now heat oil in a pan on high temp. It should be smoking hot. Coat each cauliflower with the batter and drop it in the hot oil and fry till golden brown. Keep them Aside.
  •   Now let’s prepare for sauce. Heat oil in a frying pan and add onion and fry till golden brown. Add garlic paste to it and fry again. Now add all the veggies to it and fry. 
  •    Add tomatoes ketchup, chili sauce, to the veggie and mix well. Cook them for half a min. 
  •    Optional to add soy sauce. Add soy sauce and vinegar to the veggies and fry it for few seconds. 
  •     If your sauce is not thick enough then mix corn flour and water together and put it in the veggie sauce. Sprinkle some salt as per taste. 
  •   Finally add your cauliflower dumplings to the veggie sauce and garnish it with chopped coriander leaves.

Aloo Palak or Spinach with potatoes Dish



Ingredients:
Spinach Bunch
2 medium size potatoes
Cumin seeds
1 small size onion
1 green chili
Salt to taste
1 tsp Oil
1 teaspoon Coriander powder
1 teaspoon red chili powder
Pinch of turmeric powder

Preparation Method:
  •   Heat oil in a kadhai or a frying pan and add cumin seeds to it. 
  •    After cumin seeds splutter add green chilies and finely chopped onion. Cook till golden brown. 
  •   Now add coriander powder, red chili powder and mix well. 
  •    Add chopped potatoes and cook till they are nicely soft and cooked. 
  •    Now add finely chopped spinach and close the lid for few mins. 
  •     After spinach turns dark in color and looks cooked. Open the lid and cook it for few more mins without lid to make it nice and dry. 
  •   Sprinkle some salt at the end. If you add salt in the beginning spinach will leave lots of water and will take time to evaporate. 
  •   Serve hot hot with chapattis or phulke.
