Ingredients:
1 lb Carrots (Peeled and chopped into 1-inch pieces)
2 Tbsp Olive Oil
1 Tbsp Maple Syrup (or Honey)
1 tsp Dried Thyme
1/2 tsp Garlic Powder
1/2 tsp Salt
1/4 tsp Black Pepper
1 Tbsp Fresh Parsley, chopped (Optional)
Instructions:
1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
2. In a large bowl, combine the olive oil, maple syrup, dried thyme, garlic powder, salt, and black pepper.
3. Add the chopped carrots to the bowl and toss until they are evenly coated in the mixture.
4. Spread the carrots in a single layer on the prepared baking sheet.
5. Roast for 20 to 25 minutes, or until the carrots are tender and slightly caramelized.
6. Remove from the oven, toss gently, and garnish with fresh parsley before serving hot.
