Fluffy Pancakes

This pancake recipe produces thick, fluffy, and all-around delicious pancakes with just a few ingredients that are probably already in your kitchen.



Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  2. Combine Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.

  3. Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; it's okay if there are a few lumps.

  4. Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Add a little butter to coat the surface.

  5. Cook Pancakes: Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2 minutes or until golden brown.

  6. Serve: Stack the pancakes on a plate and serve warm with your favorite toppings, such as maple syrup, fresh fruit, or whipped cream.
