This Spiced Pumpkin Stir Fry or Kaddu ki sabzi is a quick and delicious Indian dish made with pumpkin, spices and herbs, simple, wholesome and full of flavor. It is a very easy and simple to make dish & goes well with bread, Roti, Naan, Lebanese bread, tortilla or Turkish bread etc.
Ingredients:
- 2-3 onions, finely chopped
- Salt to taste
- ½ tablespoon coriander powder
- ½ teaspoon red chili powder
- ½ teaspoon turmeric powder
- ½ teaspoon garam masala
- 2 tablespoons oil
- ½ teaspoon cumin seeds
- ½ teaspoon mustard seeds (optional)
- Chopped coriander or spring onion for garnish
- 500g pumpkin, peeled and chopped
Preparation Method:
- Sauté Onions: Heat oil in a pan. Add cumin seeds and mustard seeds (if using). Let them splutter, then add the chopped onions. Sauté until the onions turn golden brown.
- Add Spices: Stir in salt, coriander powder, chili powder, and turmeric powder. Mix well to coat the onions with the spices.
- Cook the Pumpkin: Add the chopped pumpkin to the pan and mix thoroughly. Cover with a lid and let it cook on medium heat for 8-10 minutes, stirring occasionally.
- Finish the Dish: Once the pumpkin is soft, mashed, and a little oil is visible on the surface, sprinkle garam masala for added flavor. Stir well and remove from heat.
- Garnish and Serve: Garnish with chopped coriander or spring onions. Serve hot with chapati or use as a flavorful sandwich filling.
