Crunchy, fresh veggies, spices and cheese are all wrapped into a flour tortilla. Our Veggie Wraps recipe is great for a last-minute lunch or lighter dinner.
Ingredients:
4 large tortillas (whole wheat or flour)
1 cup hummus (any flavor)
1 cup mixed greens (spinach, arugula, or lettuce)
1 cup sliced bell peppers (red, yellow, green)
1 cup shredded carrots
1 avocado, sliced
½ cup cucumber, thinly sliced
¼ cup feta cheese or vegan cheese (optional)
Salt and pepper to taste
Olive oil or lemon juice (optional)

Instructions:
Lay out each tortilla flat on a clean surface.
Evenly spread about ¼ cup of hummus over each tortilla, leaving a small border around the edges.
On top of the hummus, layer the mixed greens, bell peppers, shredded carrots, cucumber, and avocado. If using, sprinkle feta cheese on top.
Add salt, pepper, and a drizzle of olive oil or lemon juice for extra flavor.
Starting from one end, tightly roll the tortilla, folding in the sides as you go to keep the filling inside.
Cut the wraps in half diagonally and serve immediately. You can also wrap them in foil for a packed lunch.
