👉 Use Dhabeli masala from the brand of your choice (Everest Dhabeli Masala)

🥔 Potato Filling (Masala-Infused)

  • 3 boiled potatoes, mashed
  • 2 tbsp oil
  • 3–4 tsp dabeli masala (adjust to taste)
  • 2 tbsp tamarind chutney
  • ¼ cup water
  • Salt to taste

Steps:

  1. Heat oil, add dabeli masala and sauté until fragrant.
  2. Stir in tamarind chutney and water to form a paste.
  3. Add mashed potatoes and salt, mix until fully coated and aromatic.
  4. Spread on a plate and top with:
  • Grated coconut
  • Chopped coriander
  • Nylon sev
  • Pomegranate seeds
  • Spiced peanuts

🧈 Assembly (Masala-Layered Pav)

  • Pav buns
  • Green chutney
  • Tamarind chutney
  • Finely chopped onions
  • Butter for toasting
  • Extra dabeli masala for dusting
  • Nylon sev for rolling

Steps:

  1. Slit pav buns and toast lightly in butter.
  2. Spread green chutney on one side, tamarind chutney on the other.
  3. Add a generous layer of potato filling.
  4. Sprinkle a pinch of dabeli masala directly inside the bun for extra punch.
  5. Add onions, peanuts, and pomegranate.
  6. Toast again until golden, roll edges in sev, and serve hot.

💡 Pro Tips

  • Want it extra spicy? Add a pinch of dabeli masala on top before serving.
  • For a party platter, cut pavs into halves and serve with extra chutney drizzle and masala dusting.
