Ingredients:
- 1 cup all-purpose flour (maida)
- 1 tablespoon semolina (sooji)
- ½ cup khoya (khoa/mava)
- 3 tablespoons oil or ghee
- Additional oil for deep frying
- ½ cup sugar
- Chopped almonds, pistachios, and cashews
- Water
Preparation Method:
In a mixing bowl, combine the all-purpose flour, semolina, 3 tablespoons of oil or ghee, and a little water. Knead to form a soft dough. Cover the dough and let it rest for 15-20 minutes.
In a pan over low heat, add the chopped dry fruits, khoya, and sugar. Mix well until everything is combined and slightly sticky, but be careful not to overcook. Remove from heat and let it cool.
Once the dough has rested, divide it into small portions and roll each into a small puri shape.
Place a spoonful of the cooled khoya mixture in the center of each puri. Carefully fold the edges over and seal them using a little milk or water. You can create decorative patterns on the edges with a fork if desired.
Heat oil in a deep frying pan over medium heat. Fry the gujias until they are golden brown, ensuring the oil is not too hot to maintain a crisp texture.
Serve these delicious gujias as a sweet or snack during festivals!
