Healthy Weet-Bix Cookies



















Ingredients:

  • 6 Weet-Bix, crushed
  • 1 cup sugar (adjust to taste)
  • 1 cup plain flour
  • 2 tbsp milk
  • 1 tsp baking powder
  • 125 g butter or margarine
  • Almonds and pumpkin seeds for garnish

Preparation Method:

  1. Preheat your oven to 150°C (fan forced).
  2. Sift the flour and baking powder into a bowl. Add the butter and sugar, then mix well with an electric beater until creamy.
  3. Incorporate the crushed Weet-Bix, followed by the milk, and beat again until combined.
  4. Shape the mixture as desired (rolling into flat balls works well) and garnish with almonds and pumpkin seeds.
  5. Bake for about 10 minutes, or until golden brown. Allow to cool and store in an airtight container.

Tips:

  • For added flavor, consider mixing in some vanilla extract or cinnamon.
  • You can substitute some of the sugar with honey or maple syrup for a different sweetness.
  • Experiment with other toppings, like dried fruits or chocolate chips, for variation.
