Stuffed Dal Dhokli

Stuffed Dal Dhokli is a dish that you can have any time of the day. It is made by simmering wheat flour squares in sweet, sour, and spicy seasoned lentils.


Ingredients

For the Dal:

  • 1 cup toor dal (pigeon peas)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1 tsp jaggery (optional)
  • 1-2 green chilies, slit
  • 1-2 tsp lemon juice
  • Water as needed

For the Dough:

  • 1 cup whole wheat flour
  • 2 tbsp besan (gram flour)
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • Water as needed
  • 1 tbsp oil (optional)

For the Stuffing:

  • 1/2 cup besan (gram flour)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 1-2 tbsp chopped cilantro
  • Water as needed to bind

For Tempering:

  • 2 tbsp ghee or oil
  • 1 tsp cumin seeds
  • 1-2 dried red chilies
  • 1/2 tsp mustard seeds
  • A pinch of asafoetida (hing)

Instructions

Prepare the Dal:

  1. Cook the Dal: Rinse the toor dal and pressure cook it with turmeric, salt, and water until soft (about 3-4 whistles).
  2. Mash and Adjust: Mash the cooked dal, add jaggery, lemon juice, and adjust the consistency with water. Keep aside.

Prepare the Dough:

  1. Mix Ingredients: In a bowl, combine whole wheat flour, besan, turmeric powder, red chili powder, and salt. Mix well.
  2. Knead the Dough: Gradually add water and knead to form a soft dough. Let it rest for about 15-20 minutes.

Prepare the Stuffing:

  1. Mix Stuffing Ingredients: In a bowl, mix besan, turmeric powder, red chili powder, coriander powder, garam masala, salt, and cilantro. Add a little water to bind it into a dough-like consistency.

Assemble the Dhokli:

  1. Divide and Roll: Divide the dough into small balls. Roll each ball into a small disc, place a spoonful of the stuffing in the center, and fold the edges over to seal it. Roll gently to flatten it again.

Cook the Dhokli:

  1. Boil the Dal: Bring the dal mixture to a boil in a large pot.
  2. Add Dhokli: Carefully drop the stuffed dhoklis into the boiling dal. Cook for about 10-15 minutes until they are cooked through.

Temper the Dish:

  1. Heat Ghee/Oil: In a small pan, heat ghee or oil, add cumin seeds, mustard seeds, dried red chilies, and asafoetida. Let them splutter.
  2. Pour Over Dhokli: Pour this tempering over the cooked dhoklis in the dal.

Serve

Garnish with fresh cilantro and serve hot with a side of yogurt or pickles!
