- 1/2 Cup Rice flour
- 4 Red onions, sliced thinly
- 4 Curry leaves, chopped

- 1/2 tsp Chili powder (adjust to taste)
Instructions:
Prepare the Onions: In a large mixing bowl, add the sliced red onions and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture.
Mix Dry Ingredients: In another bowl, combine the besan, rice flour, turmeric powder, and chili powder.
Combine: After 10 minutes, add the chopped curry leaves to the onions. Gradually add the dry mixture to the onions, mixing well until the onions are coated. If the mixture feels too dry, you can add a little water to help it bind but be cautious not to make it too wet.
Heat Oil: In a deep-frying pan, heat oil over medium heat. You want enough oil to submerge the fritters.
Fry the Fritters: Once the oil is hot, carefully drop spoonful of the onion mixture into the oil. Fry in batches to avoid overcrowding. Cook until golden brown and crispy, about 3-4 minutes per side.
Drain: Remove the fritters with a slotted spoon and place them on paper towels to drain excess oil.
