Ingredients:
- 1 cup cooked rice (white or brown)
- 1 can black beans (15 oz), drained and rinsed
- 1 cup cooked chicken or beef (optional)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup salsa
- 1 avocado, sliced
- 1/2 cup sour cream
- 4 large flour tortillas
- Fresh cilantro (optional)
- Salt and pepper to taste
Instructions:
Prepare the Filling: In a bowl, combine the cooked rice, black beans, chicken or beef (if using), cheese, salsa, and season with salt and pepper.
Warm the Tortillas: Heat tortillas in a dry skillet for about 30 seconds on each side until warm and pliable.
Assemble the Burritos: Place about 1/4 of the filling mixture in the center of each tortilla. Add slices of avocado and a dollop of sour cream.
Wrap the Burrito: Fold in the sides of the tortilla, then roll it up from the bottom to enclose the filling.
Cook (Optional): If desired, place the burritos seam-side down in a skillet and cook for 2-3 minutes on each side until golden and crispy.
Serve: Slice in half and garnish with fresh cilantro, additional salsa, or sour cream if desired.
