Poha/ Rice Flakes Snack



Ingredients:

1 cup Rice Flakes (Also known as Flattened Rice or beaten Rice)
1 small size chopped onion
2-3 curry leaves (kadipatta)
¼ cup peanuts
Cubed potato (Optional)
Green peas(Optional)
1 teaspoon cumin seeds
Pinch of turmeric powder
Pinch of coriander powder
Pinch of red chili powder
Salt to taste
1-2 tablespoon Oil
Lemon (Optional if you like tangy flavor)
Coriander leaves

Preparation Method:

  •  Wash Poha and drain water completely, keep it aside for a while
  •  Heat oil in a pan and add cumin seeds and curry leaves. Once cumin splutter add chopped onion 
  •  Saute them nicely for 2-3 mins on medium heat 
  •  Now sauté chopped potato and peas
  • Add roasted peanuts, salt, turmeric powder, coriander and chili powder and mix well 
  • Finally add your washed poha and mix well again and close the lid for few mins and turn of the heat
  •  Garnish with coriander leaves and serve it with coconut chutney

Namkeen pare/ Mathari/ Salted snacks


Ingredients:
1 cup maida (all purpose flour)
Salt to taste
Fenugreek leaves (kasuri methi)
Red chili powder (Optional)
2-3 tablespoon Oil for making the dough
Ample amount of Oil for deep frying

Preparation Method:
There are two ways of preparing it:
For simple rectangular shape: 

  • Mix Maida, salt and 2-3 tablespoon of oil and knead it into a sturdy dough 
  • Now roll into a chapatti and cut it into rectangular shapes 
  • Deep fry and serve
For Round or shape of your own with Kasuri Methi:  
  • Mix maida, salt, kasuri methi and 2-3 tablespoon of oil and knead it into a sturdy dough 
  • Now make it into small balls and draw tic tac toe or any such design on it with fork/knife 
  • Make sure that you press hard so that it doesn’t float in oil. 
  • Now deep fry and serve

Spring Rolls


     
Ingredients:

For 12 Veggie Spring Roll:
1/2 shredded carrot
Some shredded cabbage/lettuce
1/2 shredded Onion
6” square pastry sheets
Salt and pepper to taste

For 12 Non Veg spring Roll:

In addition to veggies just add
200 g minced chicken/any meat you like to eat
Oil to deep fry

Preparation Method:  
  •       Mix all the veggies and add salt and pepper to it.
  •     Stuff them into the pastry sheets in such a way that they don’t open up while deep frying.
  •     Once done, deep fry in Oil on high heat. 
  •      Serve nice crisp

Omelette




   Ingredients:

   3 Eggs
   1 small size Chopped Onion
   1 small size boiled potatoes
   3-4 Chopped mushrooms
   You can also use some more veggies of your choice like chilies, bell pepper/capsicum etc
   1 small size chopped tomatoes
   Some shredded cheese
   Sale to taste
   Pepper powder or any other seasoning you like
   1 teaspoon milk or water
   1 teaspoon Oil or can use any oil spray or Butter

   Preparation Method:
  •  Spray some oil or butter on a non sticky pan or a tawa.
  • Add all the veggies except for boiled potatoes. Saute them until they are tender and cooked
  • While your veggies are cooking you can beat the eggs with milk/water
  • Once veggies are done pour your egg mixture to the veggies and cook till the eggs are done.
  • Now sprinkle salt and pepper as per taste.
  •  In the end after your omelet is cooked sprinkle shredded cheese and serve it fresh.

Sooji Biscuits or Simolina Biscuits or Cookies




Ingredients:


• 1/3 cup all purpose flour (Maida)

• 1/3 cup fine semolina (Sooji/suji)

• 1/2 cup gram flour (Besan)

• Pinch of baking soda

• 1/4 teaspoon green cardamom seed coarsely powder (ilaichi powder)

• 1/2 cup unsalted butter

• 2/3 cup sugar

• 1 tablespoon sliced almond/pistachoi

Preparation Method:

1. Pre heat the oven to 375 degree.

2. In a bowl, mix the all-purpose flour, gram flour, sooji, baking soda and cardamom powder and set aside.

3. Let the butter come to the room temperature (butter should be soft not melted)

4. Add butter and sugar in a mixing bowl and beat for two to three minutes until light and fluffy.

5. Add the flour mix to butter and sugar mixture and knead them together to make smooth dough.

6. Divide the dough into about 24 equal parts and make them into balls.

7. Press each ball between your palms lightly; every piece should be about 3/4″ in thickness.

8. With a sharp knife softly draw some design on the top and put few pieces of almonds and pistachios and press them into the dough gently.

9. Put biscuits on a lightly greased cookie sheet and bake at 375 degrees for about 13 to 15 minutes or until your biscuits are lightly gold brown.

10. After they are lightly golden brown remove the cookie sheet from the oven. Let the biscuits cool down for two to three minutes before taking them off the cookie sheet.
