Puran Poli/ Obbattu


Ingredients:

For Stuffing:

1 and half Cup Chana Dal/yellow split peas
3/4 Cup powdered Jaggery/Gur
1 Tbsp Oil/Ghee
1 tbsp Cardamom powder
4 Cups water

For Dough:

1 Cup Wheat Flour
1/2 Cup Maida/ All Purpose flour
Pinch of turmeric powder(optional)
Pinch of Salt
Water as required
Oil or Ghee as required for frying

Preparation Method:

1. Wash and rinse the Chana dal in water and soak it for about 30 minutes to 1 hour.

2. Once done drain the water and pressure cooker the chana dal for 4-5 whistles.

3. Strain the Dal and mash it into a smooth paste in a blender.

4. Heat ghee/oil in a pan and add the channa dal paste to it. To it add jaggery and cardamom powder and give it a good mix.

5. Now you need to cook this mixture in a low -medium heat till the mixture becomes dry.  Keep stirring the mixture every 2-3 minutes.

6. Once the mixture is dry and thick, you can turn off the heat and let it cool.

7. Meanwhile knead the puran poli dough by mixing wheat flour, all purpose flour, Salt , Ghee, turmeric powder and water as required.  The dough should be soft. Now keep it aside for 10-15 minutes covered.

8. After 15 minutes divide the dough into equal size ball and start rolling them into medium size poori. Now take equal amount of channa dal filling(Puran) and stuff into the poori.  Seal them well and roll into a size of a stuffed paratha.

9. On a heated Tawa/ Griddle put some ghee/Oil and Cook the puran poli both the sides until golden brown in color. You could cook it without Oil/Ghee as well and enjoy.

Chocolate Paratha



Ingredients:

1 cup wheat flour
1 tbsp oil
Salt to taste
Water or milk as required to knead the dough
Cooking Chocolate available at home( I have used dark chocolate)
Oil spray(optional)

Preparation Method:

1.  Mix all the ingredients except for chocolate and knead it into a soft dough.

2. Once done, divide the dough into small size balls and roll them into a round shape.

3. Now stuff the crushed or grated chocolate to it and seal the sides.

4. Put it on a hot pan or skillet and cook both the sides.  You may spray some oil on both the sides to make them soft.

5. Kids love it as is but you may serve it with butter or honey as well.

Dal Puda/ Chilla (Garhwali Patungi)

Ingredients:

1 cup whole Urad dal (soaked overnight)
1 chopped onion
1 tsp Ginger garlic paste
Salt to taste
Pinch of red chili powder
Pinch of turmeric powder
1 chopped green chili
Chopped green coriander leaves
Pinch of asafoetida
water
Oil spray


Preparation Method:

1. Drain and grind the dal soaked over night in a grinder  into a thick paste.

2. Now, to it add chopped onions, ginger garlic paste, salt, red chili powder, turmeric powder, green chili, asafoetida and little bit of water to form into dosa/chila/pan cake batter. Finally add chopped coriander leaves and give it a good mix.

3. Spray some good amount of oil in a skillet or a pan and pour one big spoon of batter and spread it evenly with the back of a spoon. Cook until crisp both the sides.

4. Serve it with green chutney or pickle.

Sprouted Mung/ Moong beans pancake or Chila




Ingredients:

1 Cup Sprouted Mung or Moong
1/2 cup Gram flour or besan
2 chopped green chilies
fresh coriander leaves
1 finely chopped onion
1 finely chopped tomato
Salt to taste
grated ginger (optional)
Water as needed
Oil spray

Preparation Method:

1.  Take a bowl and combine sprouts, green chilies, onion, tomato, ginger, coriander leaves, gram flour  1/2 cup of water, salt to taste and mix well to form a smooth batter.  Make sure its not too watery.
2. Now, heat a non stick pan and spray some oil to grease the pan.
3. Pour a portion of the batter on a pan and spread it evenly to form a shape of a pan cake or chila.
4. Once one side of the pancake is golden brown flip it to the other side and cook.  You may need to spray some oil if required so that it doesn't become too rough/dry.
5. Repeat the same process to make more pancakes and serve hot with chutney or tomato ketchup. Enjoy!!!

Whole Wheat Brown Bread Recipe- Super Healthy


Ingredients:

475 grams whole wheat flour/Atta
1 teaspoon instant yeast
240 ml water at room temperature
1 Egg yolk
1/2 teaspoon salt
3 tablespoon Honey
30 grams butter at room temperature
some flour for dusting




Preparation Method:

1.To start making the dough. Take a bowl and pour the water, yeast, flour, egg yolk, salt, honey and the butter and mix well for 5-8 mins.
2. If it appears to be sticky then add some more flour and mix it for few mins again. until it forms a dough.
3. Transfer the dough into a bowl. cover it completely with a plastic bag or a cling wrap and let it rise for about 2 hours.
4. After 2 hours once its risen. dust the dough and working surface with flour.  Punch the dough down to let the air out.
5. Now place it on to the floured surface and fold the bread in towards you for few times.
6.Shape the dough into a log and place it seam side down into a loaf tin.
7.Press it down lightly to mold it into a shape of the tin and cover loosely with the plastic bag to keep room for the dough to rise.
8. Place it into the fridge and leave over night.
9. The following day - Preheat the oven for 180 degree C or 375 degree F on fan force and let it heat up for 10 mins.
10. Make sure loaf has doubled in volume.  If it has not risen enough then let it sit for further 2 hours in room temperature.
11. Now bake for 30 mins and remove it from the oven.
12. Tap the bottom of the loaf, if it is done it will make a hollow sound. If not let it bake for little more time.
13. Now allow it to cool down completely and serve your whole wheat brown bread. Enjoy!!!

Homemade Chicken Capsicum Pizza





Ingredients

Pizza dough (You may refer:  http://foodfunfreak.blogspot.com.au/2012/06/my-perfect-pizza-basedough.html for the recipe of pizza dough )
Raw chicken in bite size pieces
tomato puree
Bell pepper/capsicum cut into bite size pieces
white/red onion cut into squares or sliced
Mozzarella/cheddar cheese  whichever you like.
Oil spray/ brush
Salt and pepper to sprinkle on top


Preparation Method:

  • Preheat oven to 230°C
  • Roll out the pizza dough to fit the lightly oiled pizza tray. Spread tomato sauce on the base, then top with chicken, capsicum, onion and cheese and Bake it for 15 minutes or until crisp. Sprinkle some salt and pepper garnished with the basil leaves/parsley/any other herbs you like.
  • Enjoy your pizza :-)

My perfect Pizza Base/dough


Ingredients

  • 1 1/2 cups warm water
  • 2 tsp dried yeast
  • Pinch of caster sugar
  • 4 cups plain flour
  • 1 tsp salt
  • 1/4 cup oil

Preparation Method:
  • Mix water, yeast and sugar in a small bowl. Set aside for 5 minutes. Combine the flour and salt in a large bowl and make a well in the center. Add the yeast mixture and oil. Use your hands to bring the dough together in the bowl.
  • Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in the prepared bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm place to rise for 30 minutes or until dough doubles in size.
  • Now cut into 4 equal parts and use as required- 1 ball for 1 pizza
  • You can keep the dough refrigerated to use it within 1-2 days and freeze the rest to store it longer.

French Toast with Choco Honey


Ingredients

2 Bread Slices
2 egg
sugar
ground cinnamon or pepper
1/2 tablespoon milk
oil spray/ butter
honey and choco

Preparation Method
  • Take a bowl and beat eggs, milk, sugar, cinnamon or pepper together 
  • Heat skillet/tawa on medium heat and add 1 teaspoon of butter 
  • Now dip bread into the egg batter and put it on the tawa 
  • Cook it both the sides until golden brown. Don’t cook longer.
  • Top it with honey choco or fruits you like before serving

Homemade Stuffed Buns

Ingredients

1/2 cup All purpose flour/ Maida
1/2 teaspoon yeast
water
Salt to taste
Oil
2 small size Mashed potatoes
2 boiled shredded egg
pinch of chilly powder
pinch of pepper
pinch of chat masala/any garam masala you like



 Preparation Method
  • Take a bowl and mix all purpose flour, yeast, half teaspoon oil and water.
  • Knead it to a dough and keep it aside for few minutes
  • For stuffing- just mix mashed potatoes, shredded eggs, salt and rest of the masala
  • Now take your dough and divide it into 6-8 equal parts or depending on the size of the bun you want. dont forget that the bun will rise almost double the size after baking.
  • In a lightly clean floured surface take one portion of the dough and roll in a 4-5 inch disc. Place about 1 tablespoon of stuffing in the center and bring the edges to seal. Repeat with all the dough.
  • Preheat oven and bake at 180 C fan forced for 15 minutes
  • brush some butter and serve warm

Aaloo Paratha/Potato Stuffed Flat Bread

Ingredients

1/2 cup wheat flour
oil spray
2 medium size boiled potatoes
salt to taste
pinch of red chili powder
chopped green chillies(optional)
chopped coriandar leaves(optional)
pinch of cumin powder

Preparation Method
  • Knead the dough with wheat flour and keep it aside for few minutes.
  • Take a bowl and add grated or mashed boiled potatoes, salt, red chilli powder, cumin powder,, chopped green chillies, coriandar powder and mix well.
  • Roll them into round shape and fill the stuffing. Draw the edges towards the center to cover the mixture. Press the resulting dough gently and dust it with flour.
  • Now roll back into parathas of your shape and serve hot with chutney, curd/yogurt, gravy, and butter whatever you like.

Quick homemade bread crumbs recipe


Ingredients


2 bread slices ( white/brown/whole grain/mixed grains any available)


Preparation Method
  • Microwave bread slice for a min or half till you find it soft and sticky.
  • Remove it from the microwave and keep it aside for few minutes until it gets dried up. It will be very hard after its dried. 
  • break the bread into pieces and put it in a grinder or food processor. Don't grind it for long. Just to crush it and your crumbs are ready.
  • Can be used to make any fried dish to get the crisp

Indian Chapati/Roti/Phulke


Ingredients:

2 cups Wheat Flour
Water as required

Preparation Method
  • Mix all the ingredients and knead into a soft dough 
  • Leave it for atleast 30 minutes. 
  • Now roll the dough into a chapati/roti 
  • Heat tawa and place your chapati on it. 
  • Cook both the sides. If your dough is rolled well, your chapattis will puff up well. 
  • Serve hot with gravy, cury or any sabzi

Bread Pakoda



Ingredients

1 cup Besan/chickpea flour
3 Bread slices
1 green chili (Optional)

Small bunch of Chopped coriander

1/2 finely chopped onion
Pinch of turmeric powder
Pinch of red chili powder
Salt to taste

Pinch of baking soda/Soda-bicarb
Oil for deep frying
2-3 spoons of water

Preparation Method:

1. Take a bowl and add besan, green chili, onion, baking soda, salt, turmeric, chili powder and chopped coriander leaves, mix well.

2. Now to it add water little by little to form a batter.  The batter should be thick but of flowing consistency.

3. Keep the deep frying pan on medium flame to heat.  In the mean time slice the edges of the bread and cut them into triangles. 

4.  Now dip the bread triangles in to the batter and deep fry them.

5. Serve hot with tomato ketchup or any sauce you like as snack or breakfast.

Bread Rolls


Ingredients

Bread Slices
Boiled mashed potatoes
Chopped onion
Chopped green chilies
Salt to taste
Red chili powder
Coriander powder
Oil for frying
Water

Preparation Method
  • Add all the spices, salt, green chilies and onions to the mashed potatoes 
  • Take a bread slice and cut the edges.  Now slightly wet one slice and stuff it with the mashed potatoes mixture and bind it into a roll. Repeat the same process for others 
  • Deep fry in Oil and garnish with anything you like 
  • Serve it with chutney, ketchup or any sauce

Stuffed Methi/Fenugreek Paratha


Ingredients:

1/2 cup wheat flour
1/2 cup chickpea flour/Besan
Bunch of Fenugreek leaves (Methi)
1 tablespoon oil
2 tablespoon milk
Salt to taste

For Stuffing
Boiled mashed potato
Pinch of salt
Green or red chopped chilies

Preparation Method 
  • Chop bunch of Methi, sprinkle some salt on top and keep it aside for 15-20mins. so it becomes easy for us to knead the dough without much milk or water 
  • Once Methi is done add 1 tablespoon oil, wheat flour and chickpea flour Mix all well and start preparing for the dough. If the mixture is still tough to knead then add milk in between until you get a nice soft dough 
  •  Now keep the dough aside for as long as you can cover it with some cloth or minimum half an hour. 
  •  Roll them into round shape and fill the stuffing. Draw the edges towards the center to cover the mixture. Press the resulting dough gently and dust it with flour.
  • Now roll back into parathas of your shape and serve hot with chutney, curd/yogurt, curry, and butter whatever you like.

Palak/Spinach Paratha



Ingredients:

1/2 cup wheat flour
1/2 cup chickpea flour/Besan
Bunch of Spinach (Palak)
1 tablespoon oil
2 tablespoon milk
Salt to taste

Preparation Method

  • Chop bunch of spinach, sprinkle some salt on top and keep it aside for 15-20mins. Spinach releases lots of water by itself, so it becomes easy for us to knead the dough without much milk or water 
  •  Once spinach is done add 1 tablespoon oil, wheat flour and chickpea flour Mix all well and starting preparing for a dough. If the mixture is still tough to knead then add milk in between until you get a nice soft dough 
  •  Now keep the dough aside for as long as you can cover it with some cloth or minimum half an hour.

Pepper powder
Butter
finely chopped coriander leaves(cilantro)

Preparation Method:
  • Take a bowl and beat eggs, cilantro,milk, salt and pepper together 
  • Heat skillet/tawa on medium heat and add 1 teaspoon of butter 
  • Now dip bread into the egg batter and put it on the tawa 
  • Cook it both the sides until golden brown. Don’t cook longer. 
  • Serve it with ketchup of your choice
