Chocolate Paratha



Ingredients:

1 cup wheat flour
1 tbsp oil
Salt to taste
Water or milk as required to knead the dough
Cooking Chocolate available at home( I have used dark chocolate)
Oil spray(optional)

Preparation Method:

1.  Mix all the ingredients except for chocolate and knead it into a soft dough.

2. Once done, divide the dough into small size balls and roll them into a round shape.

3. Now stuff the crushed or grated chocolate to it and seal the sides.

4. Put it on a hot pan or skillet and cook both the sides.  You may spray some oil on both the sides to make them soft.

5. Kids love it as is but you may serve it with butter or honey as well.

Dark Chocolate Popcorns


Ingredients:

1 bowl popped popcorns
1 cup dark chocolate

Preparation Method:

1. Melt the chocolate chips in a small bowl in the microwave for 30 seconds, then 15 second intervals, stirring well in between, until melted and smooth. 

2. Remove the popped popcorns from the microwave and place back into the lightly greased bowl. Drizzle the melted chocolate over the popcorn while tossing the popcorn to coat the popcorn in the chocolate. 

3. Refrigerate for at least 10 minutes to help harden the chocolate and serve.

Stuffed Bitter melon/ Bharwa Karela


Ingredients:

2 medium size bitter gourd/melon (I have used Chinese variety)
1 tablespoon ginger garlic paste
1 finely chopped onion
1 teaspoon green chili paste( optional)
1 tbsp coriander powder
1 tsp turmeric powder
1 tsp cumin powder
1 tbsp Amchur powder( dry mango)
1 tbsp fennel powder
Salt to taste
2 tablespoon oil
Oil spray

Preparation Method:

1.  Wash and scrape the bitter gourd from outside and cut it into halves . Now scoop out the insides to make it hollow.

2. If you don't like the bitter taste of bitter gourd then you make sprinkle some salt on the scarped bitter gourds and keep them aside for 10-15 minutes.

3.  For the stuffing. Take a medium size pan and put some oil in it.  Now add chopped onions and saute until they are translucent.  Once done add ginger garlic paste and green chili paste and cook for 2-3 minutes. Make sure it doesn't burn. Now add all the dry spices( coriander powder, cumin powder, fennel powder, turmeric powder, amchur powder and salt. give it a good mix and cook for another minute, to it add scraped and scooped bitter melon to it and cook until the mixture is cooked well.  Keep it aside to cool.

4. Now drain the water from the bitter gourds and pat them dry.

5. You can now fill the stuffing into the bitter gourds and if required tie it with a thread.

6. Spray some oil in a big pan and shallow fry your stuffed bitter gourds. Serve them hot with parathas.

Badam Katli



Ingredients:

1 cup Almonds
2 spoons ghee
1 cup powdered sugar
1/2 cup milk
Pinch of food color or saffron (optional)
2 cups Water


Preparation Method:

1. Take a cup of almonds and blanch it in 2 cups of boiling water for few minutes.

2. Now peel them and keep them aside on a paper towel to completely dry.

3. Once they are dried, roast them on a medium heat until they turn golden brown. Now take them off from heat and grind it to fine powder.

4. Now in a pan add powdered almonds and sugar and cook it on medium heat stirring it continuously.

5. Once the paste is thickened  take it out from the heat and keep it to cool.

6. Now take a butter paper and grease it with some ghee or butter and put in a try or a plate to cast your katli.  Once its done, cut it into shapes of your choice.

7. Make this sweet for any Indian festivals and enjoy!
