Desi Tandoori Chicken


6-8 mixed chicken thigh, breast and leg pieces
2 tablespoon Besan/ gram flour
1 cup Hung Yogurt
2 tablespoon lemon juice
2 tablespoon Ginger garlic paste
3 tablespoon mustard oil
1 teaspoon garam masala
2 teaspoon Kashmiri mirch/ chili powder
Salt to taste
Butter optional

Preparation Method:
1. Take a bowl, add kashmiri mirch, salt to taste and lemon juice and mix well.
2. Now make cuts with the sharp knife on to the chicken thigh, breast and leg pieces and rub the mixture nicely to it and keep it aside for about half an hour.
3. Take a pan and add oil and to it now add besan flour and cook on medium heat.  Do not burn the mixture but dry roast for 4 to 5 minutes.
4. Now prepare for the marinade, tie the yogurt in a muslin cloth and hang it over a bowl for 15-20 minutes to drain. Once done transfer the thick yogurt to another bowl.
5. now to which add gram flour mixture, chili powder, salt, ginger garlic paste, garam masala, lemon juice and mastard oil.
6. Now rub this mixture to the chicken pieces kept aside and marinate it for at least four hours in a refrigerator.
7. Pre-heat the oven and grill your chicken on 300 degrees C for 20 minutes or until its done Or grill it on traditional tandoor.
8. brush your grilled chicken with butter and grill it for 5more minutes and Serve however you like, Enjoy!!!

Vegetarian Tomato Soup


2 medium size tomato pureed or 1 chopped or canned tomato puree
1 teaspoon grated ginger or ginger paste
2 garlic cloves
salt and pepper to taste
1/2 teaspoon sugar
1 tablespoon fresh lime juice
2 tablespoon sweet corns or peas
1 teaspoon sweet potato starch/flour(optional)
Herbs-Oregano, basil or thyme if you like
Fresh coriander leaves for garnishing

Preparation Method:

1. Heat oil in a dip frying fan and add few drops of oil to shallow fry peas and sweet corns.
2. once done add grated ginger and chopped garlic cloves and cook for about few minutes.
3. now add all the herbs and give it a nice mix and add pureed tomato and cook for 5-6 minutes.
4. Add pinch of salt, pepper and sugar and mix again.
5. Take 2 tablespoon of sweet potato starch in a cup and mix it well with cold water nicely so that there are no lumps.
6. now mix this with the puree and cook until the soup is thickened.
7. squeeze some lemon and finally garnish with fresh coriander leaves.

Avocado Egg Sushi rolls


1 medium size bowl of cooked rice(sushi rice or normal sticky rice)
4 Nori sheets
1/2 tablespoon Vinegar
wasabi paste(optional)
Soy sauce
Salt to taste
1 Sliced avocado
2 scrambled eggs

Preparation Method:
For seasoning:
1. Add vinegar, sugar and salt. whisk to combine.
2. heat or microwave for 10 seconds or until sugar dissolves.

For Rice stuffing:
1. Take the freshly cooked rice and add the seasoning to it. Mix it gently to avoid mashing the rice.
2. Now cover the rice and let it sit until it comes to the room temperature. Do not refrigerate.

Roll the Sushi:
Traditionally Sushi rolls are rolled with the help of bamboo mat but if you do not have one like me. Follow the below steps:
1. Place the shiny side down of a single nori sheet onto the wet plastic chopping board.
2. Spread 3/4 to 1 cup of cooked sushi rice over the nori sheet to cover the entire surface except for a 1- inch edge on two opposite ends of the nori sheet.
3. Place the sushi fillings across the center of the rice parallel to the two edges without rice and carefully roll your sushi with wet hands applying firm and even pressure along the length of the roll.
4. Stop rolling when the last 1 inch of nori remains.
5. Dab water along the nori strip to moisten and pull it up and over the sushi roll, pressing it in place to make it stick to the rest of the roll and seal the roll.
6. Use a sharp knife to cut the roll into six to eight pieces, and turn the pieces on their sides for serving.
7. Serve with soy sauce and enjoy!!

Whole Chicken Roast Recipe


For the Chicken:

1 6 lb Whole Chicken, washed and patted dry
2 Cloves of Garlic, finely minced
2 Tbsp of Fresh Rosemary, finely minced
3 Tbsp of Unsalted Butter at room temperature
Salt and Pepper, to taste
1 Whole Head of Garlic, cut in half
1 Lemon, halved

For the potatoes:

4 Large Potatoes, washed, dried and cut into large chunks
10 Cloves of Garlic, unpeeled
2 Tbsp of fresh rosemary stripped off the stem
Salt and Pepper, to taste
About 2 Tbsp of Olive Oil

Preparation Method:

1. Preheat the oven to 425 F/ 218 C degrees.
2.  Drizzle some olive oil in a large roasting dish and add the potatoes, whole garlic cloves, rosemary, salt and pepper and drizzle a bit more olive oil, toss everything together and push this mixture to the sides of the pan leaving an opening in the center for the chicken.3. Arrange your onion slices in the middle opening of the roasting dish in one layer and set aside.
4. In a small bowl, mix together the butter, fresh chopped rosemary, garlic and salt and pepper. Place ¾ of this mixture under the skin of the chicken right between the breast and skin and massage it to smear under it as evenly as possible. Place the remaining mixture on top of the chicken smearing it evenly as well. Stuff the inside cavity of the chicken with your whole lemon, the whole clove of garlic and few sprigs of rosemary and tie the legs together.
5. Place the chicken in the roasting dish on top of the slices of onion, tuck the wings under and sprinkle some salt and pepper evenly over the top.
6. Bake for about 1 hour and 40 minutes or until the internal temperature reaches 170 degrees. Remove it from the oven and cover it with some aluminum foil for about 15 minutes before carving.

Homemade Quick and Easy Mini Pizza Recipe


1 Medium size chopped Onion
1 Medium size chopped tomatoes
3-4 small or medium size mushrooms
1 medium size green bell pepper/capsicum
few cubes of cottage cheese/paneer
1 cup shredded cheese(Mozzarella or cheddar)
Salt and pepper powder to taste
Pinch of Chilli power or peri peri chilli sauce to taste
2 tablespoon Heinz tomato sauce
2 burger buns for base

Preparation Method:
  • Place the burger buns on a tray.
  • Spread bases with the tomato sauce and top it with all the vegetables.
  • Sprinkle with cheese and salt and pepper.
  • Now since they the burger buns and now the pizza base, you don't have to cook it longer but to just crisp the base and melt the cheese.
  • So, to do this you can either broil it on 180 fan force for 5 mins or until base is crisp and cheese is melted or 
  • on a skillet on  high heat until base is crisp and cheese is melted.  I find this option really quick and easy.
  • Your Mini pizzas are ready to be served, Enjoy!!

Homemade Appetizer- Gobhi/Cauliflower Manchurian Dry

1 large Cauliflower- cut int florets
1 teaspoon ginger paste
1 teaspoon garlic paste
Salt and pepper powder to taste
Chilli power 1/2 teaspoon
Oil for deep frying
1/2 cup Maida/ All purpose flour
1/4 cup corn starch/ flour
1 tablespoon rice flour
Water as needed

For the Sauce
1 tablespoon oil
1 finely chopped red onion
1 teaspoon ginger garlic paste(optional)
chopped green chillies(optional)
2 tablespoon tomato sauce
1 tablespoon chilli sauce
2 tablespoon soya sauce
1/2 tablespoon vinegar(optional)
sugar and salt to taste
spring onions or coriander leaves for garnishing.

Preparation Method:
  • Marinate the cauliflower with ginger garlic paste, salt, chilli powder and keep up aside for min 15-20 mins.
  • Take a bowl and add all purpose flour to which add corn flour, rice flour, black pepper and salt, mix well.
  • Now with little bit of water mix everything together and keep adding water little at a time to get the right consistency to get a smooth batter without any lumps.
  • Now add this batter to the marinate you prepared and mix everything well to quote the batter well on to all the florets.
  • Heat oil in a pan for deep frying.
  • Start deep frying all the florets in batches.
  • Fry until golden brown.
  • Now prepare the sauce by adding little bit of oil in a pan and add chopped onions.
  • cook until they become translucent and  ginger garlic paste to it and mix.
  • Now add all the sauces- chilli sauce, soya sauce, tomato sauce etc and mix well.
  • add salt and sugar to it and give it a good mix.
  • Garnish it with spring onion or coriander leaves
  • do your own presentation and serve it hot and crisp as an appetizer and I am sure your guests are gonna love it!!! :-)

Cabbage Spring Rolls


1/2 shredded cabbage
1/2 shredded Onion
8" square pastry sheets
Salt and pepper to taste
Oil to deep fry

Preparation Method: 

    *      Mix shredded cabbage, salt and pepper together.
    *     Stuff them into the pastry sheets in such a way that they don’t open up while deep frying.
    *     Once done, deep fry in Oil on medium-high heat
    *     Serve it with any ketchup or sauce you like.

Zucchini Dumplings/ Pakoda


4 medium size Grated/shredded Zucchini
1/2 cup chickpea flour/Besan
salt to taste
pinch of turmeric and chili powder
Oil for deep frying

Preparation Method

  • Take a bowl of grated zucchini and squeeze out all the water out of it. Zucchini contains lots of water in it and is a great source of  vitamin C. So you can keep that aside and use it in any gravy or Kofta curry which is my next preparation.
  • Now mix chickpea flour, salt, red chili powder and turmeric powder to the grated zucchini. don't add any water. Just mix everything well. If the mixture is very sticky then add some more chickpea flour
  • Now heat oil for deep frying on medium heat. Take little bit of batter and dip into the pan to see if oil is ready for frying. Now start frying pakodas using same method. Fry it until it turns golden brown.
  • Eat just like that as a snack or you can add that as a kofta dumpling(refer my next post)

Homemade KFC Fried Chicken Recipe

4 Chicken leg pieces ( you can take any kinda pieces)
1 Cup All purpose flour
Tomato ketchup/ hot and spicy chili sauce
1 egg
Salt to taste
Red chili powder
Bread crumbs ( You may refer my previous post for this )
Oil for frying

Preparation Method
  • You need 3 medium size bowl/container for these. Take 1st bowl and add beaten egg, hot and spicy tomato sauce, salt, pepper, and any other seasoning you like. Take 2nd bowl and add all purpose flour, pinch of salt and red chili powder. Take last and 3rd bowl and add only plain all purpose flour and bread crumbs.
  • Now, heat deep frying pan or a kadhai on a medium heat. 
  • Take one leg piece and dip it into the first bowl and then dip it into the second bowl, coat the mixture well to the chicken. Now, dip it to the 1st bowl again and quickly remove it. Now, finally dip it into a 3rd bowl, coat flour and crumbs mixture well and now straight to the hot oil. Repeat the same for the rest of the chicken.
  • Deep fry it until your chicken is golden brown and cooked well from inside on medium flame.
  • Serve fried chicken with mayonnaise and tomato sauce or my favorite perri perri sauce.

Healthy Lobhia Tikki / Black-Eye Pea Patties


Pinch of salt
1/2 teaspoon Ginger garlic paste
Pinch of Turmeric powder
Pinch of red chili powder
Pinch of pepper
Pinch of coriander powder
Chopped green chilies (optional)
Oil spray

Preparation Method
  • Soak black eye pea in water for over night 
  • Coarsely grind it into a paste adding little bit of water as and when required 
  • Add chopped green chilies, salt, turmeric, red chili powder, coriander powder, pepper etc and mix well. 
  • Now, heat non stick pan or a tawa and spray some oil on it. 
  • Take one table spoon full batter and drop it into the tawa. When its slightly cooked, press gently on top to form a round Patties shape. Spray some oil again on top and cook in medium heat. 
  • Serve it with any hot and sweet spicy sauce

Bread Rolls


Bread Slices
Boiled mashed potatoes
Chopped onion
Chopped green chilies
Salt to taste
Red chili powder
Coriander powder
Oil for frying

Preparation Method
  • Add all the spices, salt, green chilies and onions to the mashed potatoes 
  • Take a bread slice and cut the edges.  Now slightly wet one slice and stuff it with the mashed potatoes mixture and bind it into a roll. Repeat the same process for others 
  • Deep fry in Oil and garnish with anything you like 
  • Serve it with chutney, ketchup or any sauce

Savory French Toast


2 eggs
2 slices bread
1/2 tablespoon milk
Pinch of salt
Pepper powder
finely chopped coriander leaves(cilantro)

Preparation Method:
  • Take a bowl and beat eggs, cilantro,milk, salt and pepper together 
  • Heat skillet/tawa on medium heat and add 1 teaspoon of butter 
  • Now dip bread into the egg batter and put it on the tawa 
  • Cook it both the sides until golden brown. Don’t cook longer. 
  • Serve it with ketchup of your choice

Onion Pakoda (Fritters)

4 tablespoon Besan/chickpea flour
2 Finely chopped Onions
1 green chili
Pinch of turmeric powder
Pinch of red chili powder
Salt to taste
Oil for deep frying
2-3 spoons of water

Preparation Method:
  • Take a bowl and add besan, chopped onions, green chili, salt, red chili powder, turmeric powder and mix well. If the mixture is quiet thick add bit of water to it and mix well again. Mixture should be slightly sticky. 
  • Now heat oil for deep frying on medium heat. Take little bit of batter and dip into the pan to see if oil is ready for frying. Now start frying pakodas using same method. Fry it until it turns golden brown.
  • You can serve pakodas with any chutney you like or ketchup/sauce

Spring Rolls


For 12 Veggie Spring Roll:
1/2 shredded carrot
Some shredded cabbage/lettuce
1/2 shredded Onion
6” square pastry sheets
Salt and pepper to taste

For 12 Non Veg spring Roll:

In addition to veggies just add
200 g minced chicken/any meat you like to eat
Oil to deep fry

Preparation Method:  
  •       Mix all the veggies and add salt and pepper to it.
  •     Stuff them into the pastry sheets in such a way that they don’t open up while deep frying.
  •     Once done, deep fry in Oil on high heat. 
  •      Serve nice crisp
